Healthy Vegan Pumpkin Spice Latte

We are at the beautiful season of October when we can truly say that it is now autumn. During the fall season we all want to get a bit more cozy and enjoy the simple things of life especially a hot beverage and a pumpkin spice latte is the perfect autumnal hot beverage that will not only keep you warm, but it tastes amazing and even serves as a little snack. Healthy Vegan Pumpkin Spice Latte  

We wanted to share this recipe not only because it tastes so good, is healthy and completely vegan & refined sugar-free, but also because it was the essence of this drink i.e. pumpkin spice which inspired the name of our new fall-winter nail polish shade “Pumpkin Spice”.

Here is how to make this super easy & delicious pumpkin spice latte:

Serves 2

Ingredients:
¼ cup pumpkin puree (easy: canned version, waste free option: made from pureed fresh roasted pumpkin) 

1 tsp pumpkin spice, plus extra for decorating

2 – 2 1/2 cups unsweetened plant milk of choice (we love oat and soy)

1 tsp maple syrup

1 tbsp almond butter

2 shots espresso or ¼ - ½ strong brewed coffee. 

Pinch sea salt

Optional: vegan whipped cream

Instructions:
Mix all the ingredients (not the whipped cream) in a mixer until smooth and creamy. Pour into two cups and optionally add some whipped cream on top and a sprinkle of pumpkin spice.
