Vegan Recipe: Sushi Salad Bowl

Summer is definitely here, and the hot weather is making us crave healthier but also more refreshing meals. In today’s video and blog, we are sharing a super delicious sushi salad bowl recipe which is filled with healthy greens, vegetables and nutrients in general. Not only that, this salad bowl is also very filling and won’t leave you hungry! So, if you love the taste of sushi than make sure to check out this simple recipe which you can easily make at home!

Vegan Recipe: Sushi Salad Bowl 

Sushi is delicious but sometimes making sushi rolls is the last thing we feel like doing. This is why we love this sushi salad bowl because it is super quick and easy to make but it is also a healthy way of enjoying that delicious taste of sushi without the “hassle” of actually making sushi. 

INGREDIENTS

For the Sushi Salad (for one portion):

½ Cup Basmati Rice (uncooked)
Handful of green/salad of your choice
One sheet of nori
Veggies of your choice. We used:
    ¼ Avocado
    1 stalk celery
    ¼ cucumber
Pickled ginger
Coriander
Black sesame seeds (optional)

For the Dressing:

½ avocado
2 teaspoons spicy mustard
4 teaspoons maple syrup
2 teaspoons soy sauce
Water to taste depending on preferred texture (we used around ½ cup) 

INSTRUCTIONS

1. Cook your rice according to package instructions
2. Wash and chop your salad and vegetables
3. Cut or crumble the nori sheet
4. Make the dressing by mixing all ingredients in a mixer. Add water in small increments until it reaches your desired texture/thickness
5. Assemble the bowl with the salad and rice as the base, veggies, nori and ginger on top. Drizzle some dressing and top with black sesame seeds.
